Refreshing noodle salad with a chargrilled salmon

Impress your family, friends and everyone around you with this delicious grilled salmon and refreshing noodle salad that is a quick and tasty dish. Is someone allergic for fish? No problem, you can easily substitute the salmon with chicken or beef to your liking.



INGREDIENTS (SERVES 4)
200 grams of rice noodles
200 grams of snow peas, thinly sliced
2 carrots, thinly sliced
1 tablespoon of salt
1 teaspoon of sesame oil
1 bunch of coriander/cilantro, leaves picked
1 tablespoon of lime juice

4 (200 grams each) salmon fillets on skin
2 teaspoons olive oil
Salt & pepper for seasoning

1 lime

INSTRUCTIONS
  1. place the noodles in a large bowl, cover with plenty of boiling water and a teaspoon of sesame oil and set aside for 10 minutes or until it has soften up. Add the snow peas and set aside for one minute or until crisp. Put the thinly sliced carrot in a bowl and mix in the salt, this will soften up the carrot yet it makes it stay crispy and let it sit for 5 minutes. Drain the carrot with cold running water and do the same with the rice noodles and peas. Combine the noodles, peas, carrots, cilantro and lime juice and gently toss to combine and put it aside.

  2. Heat a grill pan on high heat or a barbeque. Skin side up, put the olive oil on the salmon and season with salt and pepper. When the pan/barbeque is on high heat put the salmon skin-side down and season the other side with the left over oil, salt and pepper. Grill for 2-3 minutes each side or to your liking.


  3. While grilling the salmon divide the noodle salad evenly between the plates. Slice up the lime in quarters and plate it together with the now finished salmon and noodle salad.
