Chocolate Chip Cookies

220 g Butter
200 g Brown sugar
180 g Granulated sugar
  15 g Kosher salt
    5 g Baking soda
  20 g Vanilla sugar
100 g eggs, about 2 whole eggs
400 g Pastry flour
300 g Milk or Dark chocolate 


  1. Cream butter, sugars, salt, and baking sodaIn a bowl combine all of the above ingredients. Mix on medium speed for 2 minutes. Increase the speed to high and mix for two more minutes. The dough should be a pale color with a fluffy texture.
  2. Add the 100 grams of eggs
    While the mixer is going drop the eggs slowly a bit at a time. This will mix the creamy mixture and the eggs. Increase mixing speed to high, then continue mixing for another minute or so, until eggs are fully incorporated.
  3. Add flour and chopped chocolate
    Add the chocolate and flour to the mixture and mix until all the flour is incorporated. Let it chill in the fridge for 30 minutes to let it firm up.
  4. Baking
    While the dough is chilling inside the fridge, pre-heat the over to 350 °F / 177 °C. After the chilling, make portions of 50 g - 70 g of the balls and put them on a baking tray lined with parchment paper. Bake the cookies for around 12-15 minutes. Transfer those nice cookies to a cooling rack and do your best to let them cool for at least 7 minutes!
